Brassica oleracea

Its excellent heat tolerance makes Early Flat Dutch Cabbage a favorite in the South as well as other warmer climates. It produces large, flat heads, weighing 6-10 lbs. The flat heads are easier to cut than round heads—and you'll have plenty of cabbage for processing into slaws and sauerkraut. It's also one of the better varieties for storage. Cabbage is a cool season crop and is grown in both spring and fall gardens. Most gardeners start seed indoors and transplant the seedlings to the garden.
